Hands on class, so you will be kneading, rolling, folding and cutting noodles, making broth and producing a handful of toppings for the ramen bowl. Fun fun fun!!!
Learn how to mix, knead, roll and shape noodles. We will be using a machine, not doing handpulled.
Ramen needs soup! And we will make a wonderful broth with shitake and seaweed and vegetables and flavor it with shaoshing, and soy sauce.
a good ramen bowl needs textures and flavors from toppings.
we will produce the following:
braised wood ears
Smoked and marinated tofu
Spicy sprouted mung beans
stir fried Choy Sum
